With a dynamic menu reflecting Paso Robles’ local abundance, Thomas Hill Organics sources a vivid array of fresh ingredients to concoct bold, imaginative dishes. What began as a humble organic Community Supported Agriculture (CSA) membership showcasing the Central Coast’s bounty quickly evolved into a popular destination for creatively prepared, honest food. Always straight-from-the-earth fresh, Thomas Hill Organics believe in the significance of organic, regionally-produced food, and works with local purveyors for their poultry, fish, grass-fed beef, lamb, and exotic meats. Nearby farmers provide all fruits and vegetables, and their breads are crafted by local bakers who are celebrated artisans of their trade. Furthering their quest to support local artisans and food purveyors, owner Debbie Thomas, is excited to reveal the restaurant’s newest offering, a dedicated dessert “bar” featuring locally-made desserts – inspired the “dessert rooms” she encountered while traveling throughout Spain. Served in the front bar and lounge area of the restaurant, Dessert Bar will feature a mouthwatering selection of housemade sweets, such as Chef Libry’s version of s’mores with brown butter graham cracker soil with dark chocolate mousse and smoked marshmallow meringue. There will also be offerings from local purveyors including Angela’s Pastries, Leo Leo Gelato and sheep’s milk ice cream from Negranti Creamery. Adding to the experience are pairing recommendations, such as Deschutes Black Butte Porter with flourless chocolate torte or Halter Ranch Vin de Paille with Angela’s lemon tart. Pairings can include coffee from Joebella Coffee and Spearhead Espresso, and tea from the Secret Garden. While desserts will be available all day, the bar will be staffed in the evenings from 5 – 10pm, offering guests a welcoming place to linger after dinner with the added convenience of being able to pop by anytime for a sweet treat.
